Bok Choy

The vegetable bok choy is often labeled bok choi. It is considered a staple of Asian cooking. It has both a crunchy stalk and some tender leaves. The whole plant is edible. Some people confuse it as celery because of the color. A fun fact is that it is called “Chinese cabbage.”

Bok choy is an excellent source of fiber and is loaded with vitamin C, vitamin K, vitamin A, and beta-carotene. It is also a source of folate, calcium, and vitamin B6 too.  The Chinese have been eating this for over 5000 years. Studies link eating bok choy to being an anti-inflammatory and antioxidant food.
