Chicken Salsa Lettuce Wraps
Here’s a very simple recipe for a Clean Eating Taco Night! (Or lunch!)
This is so easy to make, it’s perfect for nights when you’re in a rush to make dinner!
- 8 Tblsp fresh guacomole
- 2 cups cooked diced chicken breast
- 1 cup diced tomato
- 1 can white beans (rinsed)
- 1 small red onion, finely diced
- 2 Tblsp chopped cilantro
- 2 Tblsp fresh lime juice
- sea salt and pepper to taste
Combine all of the ingredients, except guacamole, in a large bowl.
Spread 2 Tbsp freshly made guacamole (per serving) on butter lettuce leaves.
Top with chicken salsa (distribute chicken salsa equally among servings.)
